What does ‘Paris’ evoke for you?

Paris evokes my definition of elegance: intelligence in service of ‘beauty’. Throughout history, people here have deployed their genius to this end, and that’s what makes Paris so refined.

What is your first memory of Paris?

A family outing to the Eiffel Tower. I grew up in the suburbs, and as a Parisian, you don’t necessarily visit the tourist sites. It was a memorable moment, which made me, as a young boy, instantly fall in love with this city.

Which personality best embodies the Parisian culinary scene, in your opinion?

For me, it’s not a personality, but a place: the bistro! Whether in its classic version, its contemporary one – bistronomie, a Parisian invention – or the most modern take: ‘caves à manger’.

What is your favorite place to dine?

I really like quai de Jemmapes. You can find lots of lively restaurants there that encapsulate what Paris is today – multicultural, young, and cool. I don’t have a particular place to recommend, I think you just have to let yourself be taken by what you fancy in the moment.

What do you like to cook when you have visitors in Paris?

A beautiful roast chicken with thyme potatoes, a nice jus, and garlic mayonnaise. It’s very simple, but so French!

What is the best representation of gastronomy in art?

I would say The Making of a Great Martini (2000) by Guy Buffet. Beyond the humor, I think it accurately represents the effort made by restaurant staff to satisfy customers.

What is the craziest thing you’ve experienced in a restaurant in Paris?

A couple of newlywed tourists who decided to pay the bill for the whole place!

What can you only taste in Paris?

It’s a cliché, but a coffee accompanied by a delicious croissant, on a terrace with a view of the Eiffel Tower.

Your best advice for visitors?

Get around by bike! It’s so different and pleasant. Paris is a small capital when compared to the rest of the world. You can easily cross it in less than an hour by bicycle. However, to discover everything interesting here, it would take more than a lifetime, so plan your visit well according to your interests!
